Recipe: Banana Pancakes/ Banana Fritters

Bananas are easily available everywhere here. It’s the cheapest of all the fruits, just 3 bucks for one, loaded with potassium, minerals, vitamins, and fiber. But unfortunately, they ripen so quickly and cannot be stored too long. Sometimes, we’re left with overripe bananas that are unsightly with those blackened spots and mushy texture. But honestly speaking, they’re a lot healthier that way. I cannot discard food; I cannot waste food. I have too much respect for it. Usually, I just make a banana cake or banana fritters/pancakes. Pancakes and fritters are a whole lot quicker and easier than cakes, so …..

Ingredients: makes 2 pancakes/8-10 fritters

  • 1 overripe banana, mashed
  • 1/2 cup all purpose flour
  • 1 tbsp butter {optional, but it’s lovely with}
  • 100ml milk approximately, to adjust the consistency {little thinner than cake batter}
  • 1 tsp vanilla essence
  • 3- 4 tbsp. Sugar
  • 2 pinches of baking soda

Method:

Mash the bananas with sugar and salt. Add the remaining ingredients and mix well. Adjust the consistency by either adding more flour or milk. Fry in butter on a very slow flame with the lid on. Flip and cook again. If you want fluffy pancakes, you can aerate them like cake batter.

  1. Nice one! There is a deep fried version known as ‘Buns’ served with spicy chutney in my native place . Dough is prepared and small balls rolled out and deep fried. Difference is that curd is used instead of milk.
