Recipe : Soya Chili Dry

About a dozen years ago, I purchased a packet of soya chunks and attempted to cook it in an extremely healthy way. Back then, I was an amateur cook. So, that really didn’t end up tasting palatable. Since I am an absolute carnivore and there are lesser steps involved in preparing meat; also considering the higher bio availability in natural unprocessed proteins, I bid adieu to soya forever. After many years, I decided I should attempt to befriend soya again. I distinctly remember the flavours and things that went wrong with my last experiment a decade ago. So, I was extra cautious as to not repeat those mistakes and viola, I formulated and made a lip smacking dish. This recipe here is so yum, I think I’ll be making this quite often.

Ingredients:

  • 1.5 cups mini soya nuggets
  • salt
  • 1/2 tsp chili powder
  • 1 tsp seasoned spices
  • 2.5tbsp maida/all purpose flour
  • 2.5tbsp corn flour
  • a pinch of baking soda, optional
  • cooking oil
  • 12 cloves of garlic, finely chopped
  • 3 green chilies, finely chopped
  • 1 medium onion, cubed
  • 1 big capsicum, cubed
  • 2 tbsp soya sauce
  • 2 tbsp red chili sauce
  • 1 tbsp ketchup
  • 2 tbsp cornflour

Instructions:

Boil the soya nuggets with salt as per instructions on the packet. Mine said 3-4 minutes. So I followed that.
You will notice it will begin to swell up.
like this…..double in size.
Drain and squeeze out excess water.
Marinate with spices for an hour.
Add corn flour and maida along with baking soda and some of the water used to boil the soya.
Heat your pan.
Add some oil and shallow fry.You can choose to deep fry which is a whole lot faster but not too healthy.
Refrain from gobbling up all the delicious crispy nuggets now itself. They’re delicious right now too and you can stop right here.
But, if you wish to take the path less trodden….
Add your cubed veggies, saute and store aside.
Fry the garlic.
Followed by the chopped green chilies.
Add the sauces and boil.
Add the corn flour slurry.
Cook well till it thickens.
Then throw in the fried soya nuggets.
Toss well to ensure the sauce coats them all evenly.
Dry it well on high heat.
Once dry, add the cubed veggies that were set aside.
Mix well and serve hot.
