I really relished this stew so much and ate to my heart’s content when my mum prepared it. Later, she packed an entire canister filled with this delicious stew only for me! I did not cook this. The credit goes all to my mother. But, she lovingly shared her secrets with me.

Ingredients:
- 1 tbsp ghee
- 2 large onions, finely chopped
- 2 large tomatoes, finely chopped
- 10 cloves garlic
- 1/2″ ginger
- 3 green chilies, finely chopped
- 1 Kashmiri chili
- 1 tsp pepper powder
- 1/2 tsp garam masala powder
- 1/2 kg mutton/goat/lamb cooked previously
- 1 large potatoes, sliced and fried
- 1 large carrot, cubed
- 1/4 cup green peas
- flour or fresh bread crumbs to thicken
- 2 tsp dried mint leaves
- salt to taste
Instrutions:
- Cook the mutton marinated with some ginger-garlic paste and salt in a pressure cooker. The cooking time will vary depending on a lot of factors so it would be unwise to assume an accurate estimate. Around 15 minutes after the first whistle or 5-6 whistles works well for me though.
- Keep aside.
- Heat a pot and add the ghee followed by onions, ginger, garlic, green chilies.
- Then add the tomatoes.
- Add the spice powders and sauté for a few seconds.
- Add the potatoes with some water and cook till half done.
- Then add the carrots and green peas.
- Once the vegetables are cooked, add the boiled meat along with its stock.
- Add some crushed dried mint leaves {which is not something you’ll ever see in any shop. It is dried and made at home only by my mother. It’s her secret ingredient. You can do it too or use fresh mint leaves instead}
- Thicken the gravy and adjust the seasonings as per your palette.
- Don’t forget to comment and remember my sweet mother while you relish your hearty bowl of goodness.
- This dish marries well with soft breads like pav, soft rolls or a dinner roll.
