Recipe: Masala Bhindi Aloo

This was what I cooked on good Friday. I took a peek into my pantry and decided to have fun with the ingredients in there. I had a lot of tomatoes and some okra. Usually, I make a delicious dry aloo bhindi sabzi. But, I wanted to incorporate some tomatoes in this dish so I decided to make a semi dry version which would go well with any Indian flatbread. I am very pleased with this experiment and am going to be kind and share my recipe with you. πŸ˜‰

Ingredients: {serves 2 as a main/sole meal and 4 as an accompaniment}

  • 1 large potato, cubed
  • 1.5 med onion, finely chopped
  • 7-10 cloves of garlic, crushed
  • 6 medium tomatoes, pureed
  • 250gms okra/bhindi, cubed
  • 3/4 tsp garam masala powder
  • 1/2 tsp red chili powder
  • 1/4 tsp haldi/turmeric powder
  • 1 tsp dhania/coriander powder
  • 1 tsp besan/gram flour
  • a drizzle of lemon juice or vinegar
  • salt to taste

Instructions:

Fry the potatoes in some oil and salt first. Cook them half way through because they will take a whole lot longer than the okra.
You can chop your vegetables until the potatoes cook.
Once they are half cooked and get a little crispy crust, add the cubed okra and fry together.
Okra also takes a little while to cook, so puree your tomatoes until then.
Heat a non stick kadhai and add oil followed by chopped onions and crushed garlic.
Add the spice powders followed by tomato puree.
Fry the masala well like this on a low flame without burning
Keep stirring in between. Once done, it will dry up a bit.
Then add your cooked potatoes and okra and toss well in this masala.
Add salt and some vingar. Be careful, you need just a few drops.
Since this is a dry dish, it goes well with any Indian flatbread. It also makes an excellent side dish.
