This was what I cooked on good Friday. I took a peek into my pantry and decided to have fun with the ingredients in there. I had a lot of tomatoes and some okra. Usually, I make a delicious dry aloo bhindi sabzi. But, I wanted to incorporate some tomatoes in this dish so I decided to make a semi dry version which would go well with any Indian flatbread. I am very pleased with this experiment and am going to be kind and share my recipe with you. 😉
Ingredients: {serves 2 as a main/sole meal and 4 as an accompaniment}
- 1 large potato, cubed
- 1.5 med onion, finely chopped
- 7-10 cloves of garlic, crushed
- 6 medium tomatoes, pureed
- 250gms okra/bhindi, cubed
- 3/4 tsp garam masala powder
- 1/2 tsp red chili powder
- 1/4 tsp haldi/turmeric powder
- 1 tsp dhania/coriander powder
- 1 tsp besan/gram flour
- a drizzle of lemon juice or vinegar
- salt to taste
