Ingredients:
- 1 tsp peppercorns
- 2 cardamoms
- 3″ cinnamon stick
- 1/4 tsp cumin
- 10 cloves
Grind the above ingredients to a powder
- 1 Tongue
- 2 onions chopped
- 1 tomato
- 3 Kashmiri chilies
- 2 lemons
- 2 tsp ginger and garlic paste
- 1/2 tsp turmeric powder
- 1.5 tbsp oil
- 1/4 tsp salt peter or sodium nitrate to retain pink colour of tongue
- Salt to taste
- 1 tsp vinegar
Fork the tongue so the marinade seeps through. Marinate. Then saute the chopped onions, chilies, tomato and tongue. Cook for 30(20+10each sideflip in cooker)minutes in pressure cooker. Cool very well and slice clean. Reduce the stock as much as possible. Then add the slices in the remaining liquid stock(gravy) and coat the pieces well. Shallow fry sliced potatoes and add to the roast. Serve hot.
