My favourite Cuisines

I am a big fan of Thai food.
I think it is just too good.
A complex balance of every flavour.
Sweet, salty, spicy and bitter.

And then I like Japanese Sushi,
paired with a teeny tiny bit of wasabi.
Many years ago, before I attempted.
I never thought raw seafood would ever get me tempted.

And then of course, our desi Chinese.
Laden with ajinomotto, yes please!
Indo-Chinese is different and spicy.
If you're not acquainted, choose wisely.

Show me an Indian who doesn't love Moghulai cuisine?
Ghee and butter laden kadhai and makhani chicken.
Agreed, it's very heavy.
Will add inches to your tummy.

Since I love coconut milk based gravies,
I love dishes prepared by Keralite ladies.
Creamy and flavourful.
Making every bite cheerful.

And who doesn't love Italian?
Not just their food, but also fashion.
Tomatoes and cream.
Lovely pasta themes.

Then there's middle Eastern.
Delicious tahini and also Tibetan.
Shwarma and momos.
And just about anything goes.

I guess I just love food.
Just about anything that tastes good.
I always enjoy a new cuisine and experience.
To soak in the culture and observe the difference.

  1. I don’t like Sushi, but I like other Japanese foods. I’m not crazy about fish, I’m a desert boy, but I love shellfish. I like everything else you listed. I especially like spicy foods. I like a lot of wasabi on things.

      I love desserts and shellfish too😍😍😍😍😍😍 so yumm….wow..I didnt cut you out as a spice lover🤔😅……me too….I love wasabi….I know I’ll be over doing it and it’s going to go straight to my head….but I still wont stop…😅😜😅😍

          1. The green chiles we have in New Mexico are unique to the Rio Grande Valley and get their heat from the alkaline soils and dry weather. Green chiles an not super hot like ghost and scorpion peppers, but they are really flavorful with enough heat to give you a good kick at both ends.

            1. Aaaah…..that way …..like the ones they stuff with cheese/mince/potatoes? We have something similar too. I think the ones we get here are called bhavnagiri chilies….we stuff them or just deep fry them with batter…..not super hot like the ones you described….

              1. In Spain they had a pimiento that looked just like our Big Jim green chiles, except the pimientos in Spain were not spicy. But yes people do make Chiles Rellenos (green chile stuffed with cheese).

                Stuffed sopapillas are stuffed with meat, pork or chicken, cheese and red or green chile. Sopapillas are deep fried batter that puffs up and is hollow in the middle. People also eat sopapillas with honey for desert.

                We roast green chile, peal and remove the seeds and then freeze them for use throughout the year. Chiles are available for roasting from the end of August into October.

                When the green chiles turn red, they are impossible to peal when roasted, so the red chiles are strung into ristras and dried. When we make red chile, we rehydrate the chiles and blend them smooth. Some people scrape the pulp off the skin before blending it. We blend the skin with the pulp.

                We chop the green chile and use in cooked dishes or as a topping. I made fried eggs for breakfast and heaped chopped green chile on them.
